Nikon D7500 Advantages:

  • AA Filter – The D7500 has no AA filter, which results in slightly sharper images. You won’t see the difference unless printing really big
  • Higher ISO Range – Borrowing the D500’s sensor, the D7500 can go as high as 102,400 and expands up to 1,640,000
  • AF Points – The D7500 has 32 more AF points, but a little bit less cross-type. Still, this lets you be more specific when selecting your focus point
  • 8 vs 7fps – Makes a difference when shooting for a few seconds
  • LCD Size– 3.2″ vs 3.0″
  • Viewfinder – 100% coverage
  • 4K Video – The D7500 can record 4K videos at 30, 25 or 24p
  • Headphone Jack – Great for monitoring audio quality
  • Buffer – Way bigger RAW buffer (50 vs 14) and noticeably bigger JPEG (100 vs 65)

First, if you need 4K video, the D7500 is currently the only DSLR available at this price level. Other than that, the high ISO range is also a big plus but 99% of the time you don’t want to use any DSLR over ~12,800.

For sports and wildlife, the bigger buffer can be a big help if you often shoot for a few seconds and take more than 50 JPEGs in a row.

Canon 70D Advantages:

  • AF System – The 70D has 19 vs 15 cross-type AF points. This will result in slightly better AF focusing in low light and low contrast situations
  • LCD Screen – It’s fully articulated vs the fixed one on the D7500. Resolution is also slightly higher
  • Dual Pixel AF – The 70D has DPAF technology, which makes auto focusing for videos much more usable
  • Less Expensive – The 70D body costs around $350 less

The Canon 70D is older and therefore doesn’t offer any enormous improvements over the D7500. They both have the same resolution and are almost equally as fast. If you want to spend as little as possible then the 70D wins, but except for the articulating LCD and DPAF (which are mostly for video), there’s no other advantages.
